    This heavy canvas device is called a turkey saddle. They are still used on some organic farms today during the breeding season.
    They are worn on the back of the "hen turkey" during the breeding season to prevent the "stag turkey" or "Tom" from damaging her back with his heavy weight and sharp talons. The hen turkey, after laying her fertilized egg, is prepared for market. The marks left on her back by the stag would be unappealing to customers purchasing the foul so, the farmer puts the saddle on the hens during mating season. .. hotairfan

      They are used any time a turkey hen needs one; being organic or not is irrelevant.
      The hen is often allowed to brood and hatch her fertilized eggs, or the owner incubates them, or they are good for baking!
      The hen is seldom sold after one breeding season.
      They are referred to as fowl, not fowl.
      (Source: I raise various birds, including turkeys)
