Ok I don't want to be the bad guy here but this is a 1967 Ford Falcon or maybe a 1966 Falcon. In 1968 the Falcon gets square taillight and side light markers on the front and rear fenders. They are similar with the door shapes, and early 1968 is the end of the 289 and replaced by the 302 which is basically the same engine just a bigger bore and stroke. I could be wrong but if your VIN number starts with C6 or C7 the C = decade of 1960 the second digit 6 or 7 = the year. Either way a very rare car to see. My dad had the last of these a 1970 4 door sedan with a 200 6.

      Not much value in restoration.

My plan was to restore it with my dad it would have had personal value and I really like this car but I have a baby due in 3 weeks and I have no time or money for it now :(

I've seen restoration jobs take years to do just using a little money at a time, more important would be the time you and you dad could spend together doing it, if you have some where to get the car inside it will last longer, borrow / rent space in a friends barn or garage? This could be a memory in the making !

it is a 1966 for sure as the 67 has some intents on the fender behind the front wheel and it would be an ok car to restore though being a 4 door it's not worth as much
