This is a Bread Recipes booklet dated Ottawa - June, 1918 published by the Canada Food Board to inform about substitutes for wheat and wheat flour which was needed overseas for the soldiers and Allies. - Substitute grains being milled included corn, oats, barley, and potatoes. - This sixteen page booklet offers recipes on using these substituted flours in baking several types of breads, muffins, biscuits, griddle cakes (waffles), pastries, cookies, and cakes.
