    Another knife from Italy and one from NY. Both horticulture knives, I believe. Can someone tell me how these are used? I believe one is for grafting and the protrusion on the top of the blade for lifting bark. It is so sharp there is no way it will ride in my pocket! Is is supposed to be this sharp?

      "CATALARAUGUS (?) CUTLERY CO, LITTLE VALLEY, NY" on one side. It was either ground improperly at the factory or someone abused the blade making it difficult to read the lettering. I believe the manufacturer is a predecessor of CASE.
      The other side has "11057" on it. I believe this should be the type and configuration. Maybe this should go back in the box and I should use something else on my trees? I was about to sharpen it but have changed my mind.

      You are correct. The top knife is a pruning knife but it has lost some of its radically hooked blade due to improper sharpening. the lower knife is a grafting or 'budding" knife as you describe. The "spud" on top of the blade should not be cutting sharp. Cattaraugus was not a predecessor of Case but a Catt. employee helped found Case. The companies evolved separately.

      How does one reshape an incorrectly sharpened blade? I would like to put some of the hook back into the pruning knife and I picked up a Victornox budding knife that someone tried to hook and that is coming along. Also my Italian bud (grafting" knife was double beveled so I am getting close to correcting that. It is kind of file/stone/polish process. The hook?

      The bottom knife is a budding knife used to place a bud into the cambium of a growing plant. Once the bark is cut the back end of the blade is used to open the place for the bud to be placed.
