    Having trouble finding info on this knife, specifically the style. Cant find any record of one just like it being sold on ebay. Think I made a great find in the "discard" pile at my work. It is stamped "veritable sabatier breswick france chef au ritz. And the blade measures 9 3/4". Used it the first night and love it! Handle is solid and not missing any rivets. Small ding out of the wood handle. After my experience, and a lot of internet searching, it seems like thrift stores aren't aware of the value of vintage cutlery and will make a bulk bin where they stash "old/rusty wood" knifes for like .50-1.00 a knife. One perk of working in the second hand field is getting a professional electric knife sharpener and switching out my plastic-handled Chinese knifes for awesome vintage carbon steel cutlery for hardly any money...Forgecraft...Chef au Ritz...Ed Wusthof

      I like the carbon steel kitchen knives myself. It's hard to find on info on nonmilitary cutlery.

      My wife has a set of Sabatier knives in the block in the kitchen and the high carbon 8" Chef is my main kitchen tool. Yours has the shape of a butcher knife for separating parts from carcasses (or storming the castle Frankenstein to kill the monster). The blade has a little too much curve for vegetable chopping, but it will earn its keep in the kitchen. Keep the greying patina and wash & dry it after use.

      It looks to be made before the 1980s and may predate WWII. Use the knife to honor the maker and its history & good luck with your search.
