I have the electrical tape covering the name of what this item is, because at my historical displays, I want people to guess what type of kitchen item it is. Of course, the word under the tape is potato peeler. It is surprising that few people guess the right answer because the principle of using abrasive to remove skins is used even today commercially to remove the skins of potatoes.
To use this tool, the potato was wetted with water and the stone abrasive was rubbed against the potato, thus removing the skin while leaving the peeled potato intact. the pointed end has the abrasive removed to allow the tool to dig out the eyes of the potato.
Commercially today, the potatoes are thrown into a rotating tub with water spraying onto the spuds. The tub is lined with a similar stone abrasive such as the abrasive that is on the bottom of our tool here. As the tub rotates, the abrasive stone can bounce the potatoes around and you can peel a bushel of potatoes in a matter of minutes, Ready for the French Fryer.
