Bought this beauty for just a few dollars. Am not sure what it was used for. I have another smaller version but would really love to know when they were produced and what they were used for.

This is a stoneware crock - the number 3 means that it holds three gallons. The decoration around the number is quite nice and probably distinctive enough that the exact maker could be determined. It is most likely a 20th Century piece and could date from the early 1900s anywhere to the 1960s - after that these crocks were generally thinner and lighter.
This sort of salt glazed utilitarian ware was made by almost every commercial pottery, large and small, and was used on nearly every farm and homestead mainly for food preservation. It probably originally had a lid.
My mom and dad made sauerkraut in one of these. I think they also used it to brine cucumbers before making sweet pickles.
