Just wondering if anyone can give me any info about who may have made this knife? It appears the blade is made of German steel, but I cant find any more info than that. It does appear to be true stag handle. Thanks for any help you can provide.

The blade is obviously Solingen Steel but that doesn't mean the entire knife is German. Solingen was bombed out very badly during WWII and most records from knife makers etc were lost. After the war when life was getting back to livable there was a lot of Solingen steel blades sent off shore to places like Mexico to be assembled into finished products. You will probably need to do a great deal of research to be able to ever authenticate this knife. I wonder why you didn't show the other side of the knife with the blade open?
