This is another set that I can't seem to find in my searches. I can find them but they are glazed does that make a difference? Would some be glazed and some not? And why would they do that?

Your s&p set appears to be “cold painted.” This means no glaze was applied. I’m assuming that pottery transitioned from cold painting so to protect the painting from wear and to clean without causing damage to the painted surface.
