Inherited these and again asking if these should be placed on my insurance policy ? From my research I think they are quite valuable.

Just a couple or few hundred $ I think. But I am not a Barbie collector. But thise are the true vintage pieces so they are worth something.
I can not tell from your photo what number Barbie she is ,that depends on value . Barbies have fallen in price and only a few would be worth insuring a Number one or 2 and yours is neither . The clothes do not look like Barbie Mattel tagged clothes . Ken really sells very low . It is a wonderful set and I would like to see Barbie standing up and close up of face to further help . To answer your question you are looking at less than 200 and it appears the Barbie has green ear from her earrings . Take them out before it gets worse and that alone depreciates her greatly . Welcome to CW and how luck to have inherited them .
