    I have no idea what this is. It's smaller and has a handle that turns, when you turn the handle the small holes open. It looks like a clothe type material covered by a metal mesh inside.

    Any idea?

      oil burner for a chaffing dish; the holes around the center are for flame adjustment. These days folks use the small sterno burners.

      This is an alcohol burner for keeping serving dishes warm. They went under a stand & were the predecessor of the (what-ya-call-it) alcohol canisters. The temperature was controlled by regulating the air holes by the do-flotchy swivel thing. If that isn't clear, I don't know what else to tell you. Not very old.
