      Industrial pressure cooking for canning. 5, 10 and 15 lbs pressure yield 228, 240 and 250 degrees F, respectively. Sweet potato requires with lots of starch would require 15 lbs pressure /250 F and beets 5 lbs/228 F.

      More a gauge than a regulator, I guess.
