    The ONTARIO KNIFE COMPANY has apparently been a concern in upper NY State since roughly the late 1880's, their "OLD HICKORY" line of kitchen knives starting more around 1924.

    The example here (roughly 7" blade + 5" handle) probably isn't nearly that old, but likely *does* have some amount of age to it, at least looking at how much it appears to have been reground/sharpened over its own lifetime -- before, that is, somebody apparently left it laying in a sink/bucketful of water until that evaporated on its own, maybe more than once, (!!!) thus its "as found" condition in the first two pics. :-( ;-(

    The 2nd two pics are what I ended up with after taking it to the wire-wheel at the shop this afternoon. Still some unavoidable pitting/etc to its blade not to mention possible rodent gnawing to its handle, but the ONTARIO KNIFE COMPANY logo reappeared along with its kinda uniquely textured (I think?) blade surface itself. Its cutting edge also remains surprisingly sharp...even in its current condition this knife could still no doubt do some damage to *something* (if not what it was intended for?) which must be a testament to the high quality 'carbon steel' it is supposed to be made of.

    One way or the other, whether I try to re-oil its wooden handle or not, it will "show" nicely as is I think, if I don't ever have any thoughts to actually return it to 'foodservice' in my own kitchen...?? ;-) :-) :)
