I was wondering if someone had any info on this Chase & Sanborn's 3lb Coffee tin. Paper Label. Can't find another one to get a little more history and the age.

Well we know the start of the company in 1862. They were the first to ship in 25 and 50 pound containers and also one and two pound containers. The company still exist today so maybe you could contact them for more info?
